Next to the premiere of ‘Don Giovanni’ in Les Arts, , Gourmet Catering & SPACES It proposes to discover the well-known opera by Mozart and the character of Don Juan also through its flavors, with a menu inspired by the operatic version of the well-known Sevilla mocker by Tirso de Molina at the Contrapoint restaurant Les Arts.
The menu, devised by the chef Paul Minister, consists of two acts and a ‘bonus track’, with a wine proposal to pair each of the dishes. A complete experience to get to know the character of ‘Don Giovanni’, a well-known lover of good eating and drinking, and Mozart’s opera.
the first course, Albur cured with strawberry pickling, places the diner in the majestic Seville in the middle of the 16th century under the gastronomic influence of Hispanic-Arab cultures, where the Don Juan de Tirso de Molina develops. For this, the Gourmet Chef team has chosen Albur, a fish from Guadalquivir, a family from La Lisa and El Mújol and the basis of the diet of the Sevillians at the time of the work and today. It is presented through one of the oldest known culinary processes of Arabic origin of cooking and preservation, the marinade. The pairing proposal for this dish is the Mahara Albur 2019, a Palomino Fino de San Fernando, Cádiz.
The second act consists of Low temperature pheasant with potato and mushrooms, in homage to one of the scenes of the opera. In it, Don Giovanni is in the dining room of his palace with a glass of Italian Marzemino and, while he praises the wine and women as “the essence and glory of humanity”, his servant Leporello, starving, steals a pheasant breast from him. This dish is paired with a wine from the Dolomites (Italy), the 2019 foradori from Teroldego, a variety of red grapes that, according to ampelographers, is the precursor of the Marzemino mentioned in the work.
To end this gastro-musical tour, based on the two acts of the opera, a version of the Mozart cake, Tribute to the Austrian composer who has been the source of inspiration in the new series Menus Pairing of Les Arts, whose perfect accompaniment will be a glass of Champagne André Clouet Brut Grande Réserve, a Pinot Noir made in A Bouzy, France.
